Fondée au VIIIème siècle sous le règne de Charlemagne, elle connut mille ans de vie monastique jusqu'aux prémices de la Révolution Française. Joyau d'architecture, vous découvrirez l'église abbatiale et son sarcophage du XIIème siècle, oeuvre du Maître de Cabestany; le logis abbatial et son plafond à la française de la fin du XVème siècle; le réfectoire des moines et sa chaire de lecture (XIVème siècle) , classée comme unique en France, et les celliers taillés dans la roche où naquit en 1531 la Blanquette, premier vin effervescent au monde.
