Crispy on the outside and soft on the inside, these Potato Coquettes / Vegetable Coquettes are an easy and delicious snack you can make at home. Made with mashed potatoes, mild spices, onions, herbs, and green chillies, these croquettes are coated in panko breadcrumbs and shallow fried until golden and crunchy. They are perfect as a tea-time snack, party starter, or kids’ favourite. You can keep this recipe completely vegetarian or add crispy bacon bits or smoked chicken ham for a tasty non-vegetarian twist. Serve these hot with a quick cheesy chipotle sauce for an irresistible combo.
