Makes 4 Servings Ingredients: 2 tablespoons olive oil 1 ½ pounds chicken tenders 1 cup chopped yellow onions 3 garlic cloves, minced 1 teaspoon lemon and pepper seasoning 2 ¾ cups low-sodium chicken broth 1 cup orzo ¼ cup chopped fresh parsley leaves 1 teaspoon grated lemon zest 1/3 cup (1 ½ ounces) grated Parmigiano-Reggiano Directions: 1. Heat the oil in a large pot over medium-high heat. Add the chicken, onions, garlic, and lemon and pepper seasoning. Cook until the chicken tenders are golden brown, 6 to 8 minutes, stirring often. 2. Add the broth and orzo. Reduce the heat to medium, cover, and cook until the orzo is tender, 15 to 18 minutes. Stir in the parsley, lemon zest, and Parmigiano-Reggiano and serve.
