Here’s a classic, flavorful Mutton Biryani recipe (Hyderabadi-style dum biryani) you can make at home 🍽️ --- 🥩 Ingredients For Marinating the Mutton: 500g mutton (bone-in pieces preferred) 1 cup thick curd (yogurt) 1 tbsp ginger-garlic paste 2–3 green chilies (slit) ½ tsp turmeric powder 1 tsp red chili powder 1½ tsp biryani masala (or garam masala) 1 tsp coriander powder ½ tsp cumin powder Juice of ½ lemon Salt to taste 2 tbsp chopped mint leaves 2 tbsp chopped coriander leaves 2 tbsp fried onions Marinate for at least 2 hours (overnight is best). --- For Rice: 2 cups basmati rice 4–5 cups water 2–3 green cardamom 4 cloves 1 bay leaf 1 small cinnamon stick Salt (1½ tsp approx.) 1 tsp oil or ghee --- For Layering: ½ cup fried onions 2 tbsp mint + coriander leaves 2 tbsp warm milk + a pinch of saffron (optional) 2 tbsp ghee --- 👩🍳 Method 1️⃣ Cook the Rice Wash and soak rice for 30 minutes. Boil water with whole spices and salt. Add rice and cook until 70% done (still slightly firm). Drain and set aside. --- 2️⃣ Cook the Mutton Heat 2 tbsp oil in a heavy pot. Add the marinated mutton. Cook on medium heat for 20–25 minutes. Cover and cook until mutton is 80–90% tender. (Add little water if needed.) --- 3️⃣ Layering (Dum Cooking) Spread cooked mutton evenly at the bottom (if not already in heavy pot). Add half the rice over it. Sprinkle fried onions, mint, coriander, saffron milk, and ghee. Add remaining rice and repeat toppings. --- 4️⃣ Dum Cooking Cover tightly (use dough to seal edges if possible). Cook on very low heat for 20–25 minutes.
