Snow skin mooncake with vanilla custard. These are super easy to make and are my favourite type of mooncake! The snow skin is soft and slightly chewy like mochi. Traditionally snow skin mooncakes should be made with gao fen which is fried/cooked glutinous rice flour. As it is cooked it can be eaten raw which makes the mooncakes fragrant and gives a melt in the mouth texture. Gao fen can be found in many Asian groceries and I do recommend buying it rather than making your own as you my get a powdery after taste. Many recipes now use mochi as the skin but I have been using this recipe for years and it has never failed me! When working with the snow skin always use gloves as the dough is very sticky!
