FOR KOFTA : minced chicken 1/2 kg yogurt 2 tbsp full ginger garlic paste 1/22 tbsp salt 3/4 tsp red chili pwd 1 tsp turmeric 1/4 tsp dry roasted cumin pwd 1/2 tsp garam masala pwd 1/2 tsp green chilies chopped,mint and coriander chopped as required 1 small onion paste khus khus 1 tbsp /roasted chickpeas 2 tbsp (soak and grind to make paste) FOR CURRY : spinach 1/2 kg chopped oil 1/2 cup desi ghee 2 tbsp fried onion 1 medium or large ginger garlic paste 1/2 tbsp yogurt 3/4 cup cream 2 to 3 tbsp salt 3/4 tsp or to taste red chili pwd 1/2 tbsp or to taste turmeric 1/2 tsp cumin 1 tsp coriander pwd 1-1/2 tbsp garam masala pwd 1/2 tsp(at the end) cloves 4 black pepper 12 green cardamoms 2 FOR GARNISH : julienne cut ginger 1 tbsp green chilies 4 to 6 chopped coriander 3 tbsp first add chicken in chopper and mince it finely then add all above ingredients for kofta making in it and mix leave for 15 minutes now heat up oil with ghee and add g.g paste and all spices except garam masala pwd. add whole spices too then add fried crushed onion and yogurt mix well and cook til oil comes out then make koftas from the mince and add them in gravy. add 1/4 cup water as well. wait for a boil and cover the lid cook for 5 minutes now add chopped or blanched and ground spinach in it mix well and cook an other 5 to 7 minutes. then add garam masala pwd,ginger,green chilies and coriander. add cream and mix nicely cover the lid and leave it for a minute or so. serve with lachcha paratha or naan.
