BAKED RICE PUDDING RECIPE (makes 5 servings) Ingredients: 1/2 cup Arborio rice, or other short grain rice (120g) 4 cups milk, dairy or non-dairy (960ml) 2 tbsp maple syrup 2 cinnamon sticks 1-2 tsp vanilla extract 1 tbsp cubed butter (15-20g) NUTRITIONAL INFO (per serving): 210 calories, fat 6.4g, carb 30.2g, protein 7.7g Preparation: In a casserole dish add the rice, milk, maple syrup, cinnamon sticks and vanilla extract, and mix with a spoon. Place in the oven at 325F (160C), bake uncovered. After 30 minutes, remove from the oven and stir everything with a spoon, to avoid sticking the rice. Add the pieces of butter and put it back in the oven, and cook slowly for another hour. Once it's done, the rice pudding will be golden, with a lovely skin formed on top.
