In this webinar recording, WSET School London educator and Sake Samurai Natsuki Kikuya discusses a particularly important rice variety. Today there are over 120 different sake rice varieties grown all around Japan, but you cannot start learning about them without mentioning Yamadanishiki, known as "the king of sake rice". In this video, Natsuki explores the history and stories behind the popularity of Yamadanishiki. She also discusses how microclimate and regionality factors affect the quality of rice itself in Hyogo Prefecture and other areas of Japan.
