Uzbekistan is home to an iconic disk-shaped bread known locally as Samarkand bread. Named after the city of Samarkand, this bread is enjoyed year-round and typically eaten at the start of every meal. Unlike most mass-produced loaves, these breads are still shaped by hand and baked inside tandoor ovens. We visited a traditional bakery on the outskirts of Samarkand to see how 15,000 of these unique loaves are made every day and what it takes to bake such big batches.
