Soft Puran Poli | होळी स्पेशल माऊ पुरणपोळी | Puran poli recipe konkani style | #youtube #shortsfeed For the Puran (Sweet Lentil Stuffing): Chana Dal (Bengal Gram): 1 cup (washed and soaked for 3 hours ) Jaggery (Gud/Godd): 1 cup, finely grated or powdered Cardamom Powder (Elaichi): 1/2 tsp Nutmeg Powder (Jaiphal): 1/4 tsp (This is the secret for that authentic aroma) turmeric powder: 2 pinch Ghee: 1 tsp Water: 2 cups (for boiling) For the Poli (The Outer Dough): Whole Wheat Flour (Atta): 1 cup All-Purpose Flour (Maida): 1 cup (You can use 2 cups of Atta if you want it healthier, but Maida adds the necessary elasticity) Turmeric Powder: ¼ tsp (for that golden color) Salt: 1/4 tsp Oil: 1 tbsp Water: As needed for a very soft, pliable dough Prepare the Dough Mix: Combine the flours, salt, and turmeric. Knead: Add water gradually to make a dough that is softer and stickier than regular chapati dough. Oil Massage: Pour the oil over the dough and knead it until the oil is absorbed and the dough is stretchy. Rest: Cover and let it rest for at least 2 hour. This is crucial for easy rolling! Prepare the Puran (The Filling) Boil: Pressure cook the soaked Chana Dal with 2 cups of water for about 2-3 whistles until it is completely soft but not a liquid paste. Strain: Drain the excess water. Sweeten: In a pan, mix the cooked dal and grated jaggery. Mash it very finely with a potato masher so there are no lumps and cook on medium heat, stirring constantly. The mixture will turn liquid first and then start thickening. The Test: Cook until the mixture is thick. If you stick a spatula in the center, it should stand upright. let it cool Flavor & Mash: Add cardamom, nutmeg after the Mixture get completely cool. Assembly and Rolling Take a small ball of dough and a slightly larger ball of the Puran stuffing Flatten the dough ball in your palm, place the Puran in the center, and bring the edges together to seal it like a dumpling. Pinch off any excess dough. Dust with flour and roll very gently into a thin circle. Use a light hand so the stuffing spreads evenly to the edges without tearing the skin. 4. Roasting Heat a tawa (griddle) on medium-high heat. Place the Poli on the tawa. When small bubbles appear, flip it. Apply a generous amount of Ghee. It should puff up beautifully.
