Found this one in a Betty Crocker publication called "supermoist cakes for all occasions" at the supermarket check out line magazine rack: 1 box white cake mix 1/4 cup water 1/3 cup vegetable oil 4 egg whites 1 box (4-serving size, 85g, 3oz) raspberry-flavored gelatin 1 cup very hot water 1/2 cup frozen pink lemonade concentrate, thawed (divided into two 1/4 cup portions) (you can use regular lemonade instead of pink) 1 cup frozen whipped topping, thawed (cool whip) 1 container Betty Crocker whipped vanilla frosting Fresh raspberries and strips of lemon zest for garnish In a small bowl, combine jello with 1 cup of hot water and mix until jello powder is dissolved (set aside) In a large bowl combine cake mix, oil, 1/4 cup water, 1/4 up lemonade concentrate, egg whites and 1/4 cup jello/water mixture and beat until smooth. Pour cake mixture into a greased 9x13" pan and bake at 350F for 30-35 minutes until a toothpick inserted in the center comes out clean. While the cake is still warm out of the oven, take a fork and poke holes in the top of the cake, making sure there are holes in every inch of the top. Add the remaining 1/4 cup lemonade concentrate to the gelatin mixture and stir. Remove 1 tbsp of the gelatin/lemonde mixture and set aside. Pour the gelantin mixture slowly over the cake. Cool cake completely. Mix 1 cup of the Cool whip topping with the canned frosting and spread over the cooled cake. Take the 1 tbsp of gelatin mixture you set aside and heat in the microwave for a few seconds if it has set to make it liquid again. Drizzle this over the frosting and then swirl into the frosting. Garnish with fresh raspberries and lemon zest if desired. Keep the cake refrigerated. Anticipated answers to FAQs: You can use any kind of boxed cake mix for this or a from scratch cake recipe.
