Pecan Pralines 3 cups light brown sugar 1 cup heavy whipping cream 2 cups pecan halves 1 teaspoon vanilla extract ¼ cup butter 2 tablespoons light corn syrup Toast pecans - preheat oven to 350. Spread pecans on a parchment paper lined baking sheet in a single layer. Bake for 5 minutes, stir/shake pecans around the bikinis sheet and bake for an additional 5 minutes - total baking 10 minutes. Remove from the oven, set aside, and allow to cool. Using a heavy bottom pot with high sides, add brown sugar, whipping cream, butter, and corn syrup to the pot. Cook over medium/medium high heat until mixture begins to boil while stirring occasionally. Once the mixture begins to boil, attach a candy thermometer to the pot and the mixture reaches 236 degrees (soft ball stage). This will take between 6-9 minutes once a continuous boil begins. When the mixture reaches 236 degrees (soft ball stage), remove from the heat. Allow the candy mixture to stand until it cools to 150 degrees (this can take up to 20 minutes) to cool to this temperature. Once at 150 degrees, stir in toasted pecans and vanilla extract. Stir for approximately 1 minute or until the shine reduces in your candy. Working quickly…scoop/spoon out onto a parchment paper lined cookie sheet. Allow pralines to set for about 15-20 minutes or until they firm up. Store in an airtight container separated by wax paper on the countertop. HOW TO FIX A BATCH THAT SETS UP TO QUICKLY – IF your candy sets before you are able to scoop them, place back on the stove top over medium heat with about 7-8 tablespoons of whipping cream until the mixture melts down again. Remove from heat, stir gently, and scoop as normal. Enjoy! If your candy has white spots as it cools, this is just sugar that has started to crystalize as the candy cools. This does not affect the texture or taste. No problem at all.
