Please click the link below to subscribe to Curries With Bumbi as I need your support to bring more recipes for you -- / @currieswithbumbi Ingredients for Butter Chicken Recipe- serves 5 For ginger garlic paste - garlic cloves - 15 in number or 42 gms /0.09 lb ginger - 2 inch long /47 gms /0.10lb For marination - Chicken- 500 gms/1.10 lb boneless, skinless chicken thighs yogurt - 2 tablespoon heaped ginger garlic paste- 1 tablespoon kashmiri red chili powder/paprika- 1 teaspoon lemon/lime juice- 1 teaspoon oil- 1 teaspoon For making the creamy butter chicken gravy - medium bright tomatoes 6 to 7 /550 gms/1.21lb medium to large onion-1 /115 gms/0.25 lb cashew nuts- 6 to 7 Turmeric powder- 1/4 th tsp cardamom powder/elaichii powder- 1 teaspoon mace powder/ javitri powder- 1/4th teaspoon garam masala powder- 1/2 teaspoon ( link for my homemade garam masala powder is given below) kashmiri red red chili powder/paprika - 1/2 tablespoon ( Kashmiri red chilies are very mild regarding spice level) kasuri methi/dried fenugreek leaves- 1/2 teaspoon, crush it in your palm before adding salt 1 teaspoon + 1/2 teaspoon while frying chicken sugar / honey - 2 to 3 tablespoons or more if your gravy tastes sour heavy cream/cooking cream- 1/4 to 1/2 cup For making chili oil- kashmiri red chili powder/paprika- 1 tablespoon butter- 1 tablespoon oil- 2 teaspoons 1 tablespoon oil for frying chicken 1 tablespoon butter + remaining oil after frying chicken required for gravy. Method- Make ginger garlic paste Marinate chicken for a minimum of 1 hour Boil tomatoes, onion and cashews for 2-3 minutes Drop the above in cold water and peel off the tomatoes Blend the tomatoes, onion and garlic to a smooth paste. You may again pass this paste through a strainer. Fry the chicken heat butter in pan, add the tomato blend, add the spices, tomato puree and cook for 20 minutes on low heat. add the chicken, add cream, cook for a 5-6 minutes on low heat. add the chili oil at the end. For making chili oil- take kashmiri red chili powder in a bowl heat oil and butter. You can even use only oil in place of butter. pour hot oil on top of chili powder drizzle few teaspoons on top of curry and save the rest for later use in any type of curry preparation.
