The die-cut cookies are vanilla and cocoa flavors, the squeeze-out cookies are cinnamon and matcha flavors, and the baked cookies are dressed up with icing and chocolate. It is recommended to mold the cookies as soon as you mix them, as the dough will harden over time, making it difficult to squeeze out the cookies. ▷Ingredients: ■Molded cookies (vanilla) 70 g unsalted butter 40 g powdered sugar Pinch of salt 1 egg yolk 1 teaspoon vanilla extract 110 g rice flour 15 g ground almonds ■Cookies (cocoa) 70 g unsalted butter 45 g powdered sugar 10 g cocoa powder 1 egg yolk 95 g rice flour 15 g ground almonds ▷How to make: 1. Add powdered sugar and salt or cocoa powder to room temperature unsalted butter and mix well. 2. Add egg yolks and mix well. 3. Add rice flour and ground almonds and mix until powdery. 4. Wrap the cookie dough in plastic wrap and roll out to a thickness of 8 mm, then refrigerate for 20 minutes. Bake in a preheated oven at 170℃ for 15 to 20 minutes. ■Squeeze-out cookies (cinnamon) 80 g unsalted butter 50 g powdered sugar 2/3 teaspoon cinnamon powder 1 egg white 1 teaspoon rum (to taste) 105 g rice flour 15 g ground almonds ■Squeezed cookies (matcha) 80 g unsalted butter 50 g powdered sugar 5 g matcha 1 egg white 100 g rice flour 15 g ground almonds ▷How to make: 1. Add powdered sugar and cinnamon powder or matcha powder to room temperature unsalted butter and mix well. 2. Add the egg whites in two batches and mix well. 3. 3. Add rice flour and ground almonds and mix until powdery. 4. Put a scoop of the cookie dough into a squeeze bag fitted with a clip. Bake in a preheated oven at 160℃ for 13 to 18 minutes. Bake the cookies in the shape of a wreath with an open center at 160°C for 10 to 15 minutes. 6. 6. Add a little lemon juice to the powdered sugar to make a hard icing and decorate.
