Black Forest Cake For the cake Ingredients 1 3/4 cups sugar 3/4 cups dark cocoa powder 2 cups flour 1 1/2 teaspoon baking soda 2 teaspoons baking powder 1 teaspoon salt 3/4 cup vegetable oil 2 teaspoons vanilla extract 3 large eggs 1 cup buttermilk 1/2 cup strongly brewed coffee Instructions 1.Preheat oven to 350°F. Grease and line two 8-inch cake pans with parchment paper. 2.In a large bowl, whisk together sugar, cocoa powder, flour, baking soda, baking powder, and salt. In a separate bowl, whisk oil, vanilla, eggs, and buttermilk. 3.Pour the wet ingredients into the dry, whisking until no lumps remain. Pour in brewed coffee, mixing until just combined. 4Pour batter into prepared pans and bake for roughly 30 minutes, or until a knife inserted in the center of the cake comes out clean. Cool completely on a wire rack before frosting. For the cream Ingredients 2 cups heavy whipping cream 8oz softened cream cheese 1 teaspoon vanilla extract 2/3 cup sugar Instructions 1. Beat softened cream cheese and sugar until combined 2. Whip heavy cream until soft peaks form 3. Add cream cheese mixture and the vanilla to whipped cream. Beat until stiff peaks form 4. Leave covered in fridge for a a few hours or overnight (if you dont it will spill out the sides of the cake, still delicious but messy!) For the Cherry Filling Ingredients 3/4 lb fresh cherries, chopped 1/2 cup (100g) confectioner sugar 1 Tbsp (8g) cornstarch 2 Tbsp (60mL) lemon juice Instructions 1.Remove pit & chop cherries into quarters. Place them in a medium saucepan over medium heat with confectioner sugar & lemon juice. Allow to simmer until cherries soften. 2.Remove 2 Tbsp of the juice from the pan & mix it in a small separate bowl with cornstarch. Add cornstarch mixture to cherries, & allow to simmer over low-medium heat for a few minutes. 3. Remove from heat and let cool before assembling. Assembly 1. Spread a layer of the cherry filling on top of your first layer. Add half the cream. Add your next cake layer topped with cream, filling, and then whole cherries.
