Today we're transforming LEFTOVER rice into restaurant-quality Cheesy Rice Balls - crispy on the outside, gooey cheese on the inside, and bursting with flavor! This is zero-waste cooking at its finest, proving that leftovers can become the star of your next meal. These golden, crispy balls are perfect as appetizers, evening snacks, or even a creative way to get kids excited about eating rice. No one will believe these started as yesterday's leftovers! Let's turn that leftover rice into something extraordinary! 🤤 Day 27 of Making Easy Meals on Lazy Days: Cheesy Rice Balls - Oye Hoye Kamaal! 😍 Ingredients: For the rice ball mixture: 2 cups leftover cooked rice (preferably cold) 1 cup boiled potatoes, mashed 1 small onion, finely chopped 1 green chilli, finely chopped 1/4 cup fresh coriander, chopped 1 teaspoon garlic powder 1 teaspoon chilli flakes 1 teaspoon pizza seasoning 1 teaspoon roasted cumin powder (bhuna jeera) 1 tablespoon cornflour Salt to taste Black pepper to taste 100g cheese (cut into small cubes for stuffing) 1 cup bread crumbs for coating Oil for deep frying For the cornflour slurry: 2 tablespoons cornflour 1 tablespoon all-purpose flour (maida) Salt to taste Black pepper to taste Water as needed (about 1/4 cup) Method: Prepare mixture: In a large mixing bowl, add leftover rice (make sure it's not too hot). Add mashed potatoes, chopped onions, green chilli, coriander, garlic powder, chilli flakes, pizza seasoning, bhuna jeera, cornflour, salt, and pepper. Mix well: Using your hands, knead everything together until it forms a cohesive, smooth dough. The potatoes and cornflour act as binding agents. If too sticky, add more cornflour; if too dry, add a tablespoon of water. Shape and stuff: Take a small portion (about golf ball size) of the mixture. Flatten it slightly in your palm, place a cheese cube in the center, and carefully seal it by bringing the edges together. Roll into a smooth ball. Repeat with remaining mixture. Prepare slurry: In a bowl, combine cornflour, maida, salt, pepper, and gradually add water while whisking to create a smooth, lump-free slurry. The consistency should be like pancake batter - not too thick, not too thin. First coating: Dip each rice ball into the cornflour slurry, ensuring it's completely coated. Let excess drip off. Second coating: Immediately roll the slurry-coated ball in bread crumbs, pressing gently so they adhere well. This double coating creates extra crispiness. Chill (optional): For best results, refrigerate the coated balls for 15-20 minutes. This helps them hold shape during frying. Heat oil: Heat oil for deep frying in a kadhai or deep pan. Test with a small piece of bread - it should sizzle and rise immediately. Fry: Gently slide 3-4 balls into hot oil (don't overcrowd). Fry on medium heat for 3-4 minutes, turning occasionally, until they're golden brown and crispy all over. Drain and serve: Remove with a slotted spoon and drain on paper towels. Serve immediately while the cheese is still gooey inside. Serving Suggestions: Serve with ketchup, mayo, or any dipping sauce Green chutney or sweet chili sauce works great Perfect with hot chai or coffee Pro Tips: Use day-old rice - it's drier and binds better Make sure cheese cubes are completely sealed inside Don't skip the double coating for maximum crunch Fry on medium heat to ensure even cooking Why You'll Love This Recipe: 🌟 Perfect zero-waste recipe using leftover rice! 🌟 Gooey cheese center that oozes when you bite 🌟 Crispy exterior with soft, flavorful interior 🌟 Great way to use up refrigerator leftovers 🌟 Kids absolutely love these cheesy treats 🌟 Perfect party appetizer that impresses guests 🌟 Budget-friendly yet looks restaurant-quality 🌟 Can be frozen and fried later for quick snacks 👇 SUBSCRIBE for more Easy Meals on Lazy Days recipes! 📱 Follow @hustler_rasoiya on Instagram for daily leftover transformation ideas 💬 Comment sharing your favorite leftover recipe! 👍 Like if you love zero-waste cooking!
