Ambrose Heath was a prolific English food writer, and this ex-library cookbook is full of classic mid-century recipes featuring honey. This recipe caught my eye because we rarely make candy on the show. These homemade caramels use honey, sugar, cream, condensed milk, and butter — cooked to the soft ball stage (246°F / 118°C) and cooled into chewy, nostalgic sweets. Along the way, I also dive into some quirky vintage measurements like “breakfast cupfuls” and “teacupfuls,” which are anything but consistent! HONEY CARAMELS Recipe Mix together two breakfastcupfuls of sugar, a teacupful ot light corn syrup, a teacuptul of liquid honey and the same of condensed milk and of thick cream, a breakfast cupful of milk and half a teacupful of butter. Cook over a low heat, stirring all the time until the temperature registers 246 degrees Fahrenheit. Take the pan off the heat and add two teaspoonfuls of vanilla essence, and turn the mixture at once into a slightly greased pan.
