FRESH TOMATO SAUCE FOR PASTA: Add some crushed garlic and a big splash of olive oil to a frying pan. When the oil is really hot add the chopped tomatoes and stir (and chilli pepper if you want). After a couple of minutes you should be able to mash the tomatoes to a pulp. Take off the heat and add salt to taste, a handful of grated parmesan cheese and a handful of torn basil leaves. Chicken and Leek casserole: Chop and fry your leeks for about 10 minutes. Add chopped chicken, cubed potatoes and cover with broth. Cook for around 20 minutes. Add a couple of handfuls of fresh spinach and stir until wilted. You can swap the chicken for chickpeas, or swap the spinach for frozen peas.
