In this video Chef Matt Basile from the Fidel Gastro food brand shows you how to make a Decadent Cauliflower Dish that will change the way you, as well as anyone else who eats it, thinks about Cauliflower. One of the key flavors of this dish is the Clubhouse Savory Mediterranean mix. This mix works well with the cauliflower because it has citrus in it to help break down the cauliflower as well as garlic and roasted peppers. Since cauliflower soaks up flavor like a sponge the garlic and roasted red pepper flavors naturally seep into the vegetable as it cooks. The first step in the creation of this cauliflower dish is to break down the vegetable into pieces you can actually eat. Take your head of cauliflower and cut it right in half. Now follow the crevices and break it into nice large chunks. Put all those cauliflower chunks into a bowl and set it aside. It's time to make the marinade. In a medium sized mixing bowl add canola oil, Clubhouse Savory Mediterranean with flax seasoning, a bit of the signature Greek spice, garlic powder, rosemary, and finally squeeze in some fresh lemon juice. Mix that all together thoroughly. Now place a sheet of tin foil over a baking pan and put your large chunks of cauliflower on it in a single file row. Pour your freshly made marinade right over the top of them. Once you have them covered in marinade mix them around making sure to get an even coating on each floret. Preheat your oven to 375' and put your cauliflower in for about 25 minutes. Your next step is to make the roasted pepper sauce that goes with the cauliflower. Take both a red pepper and a green pepper and place them on a small round baking pan. Now pour some canola oil on them, you can get a good idea of exactly how much from watching the video. Put these into the oven under the broiler for about 5 minutes, just until they get nice and charred, then flip them over and char the other side. Once charred pull them out and put them in a bowl, cover that bowl with plastic wrap and let them sit for bit until they get nice and soft. Once the peppers are well roasted and reach a consistency similar to what you see in the video remove the seeds from them as well as some of the skin. You want to leave a bit of the charred skin on the peppers for the extra flavor it adds. Now put your roasted peppers into your food processor and add fresh chopped jalapenos to them, fresh garlic, parsley, fresh cilantro, a bit of lemon juice, and then process them thoroughly. Once you have your pepper sauce blended down you will add it to a saucepan along with some salt and butter. You will cook this on medium for about 10 minutes, or until it begins to thicken up. Once it thickens properly set it aside. Moving on to step four we need to make our Greek Yogurt Garnish. In a normal sized bowl add several cups of Greek Yogurt. Season that with ground basil then grate fresh lime into it and stir it all together. That was easy wasn't it? Now pull your cauliflower out of the oven and plate it. Cut up a few limes into quarters, and then grab your pepper sauce. You will make a straight line, as thick as you prefer, of your pepper sauce on your plate. Matt has chosen to use what looks like a cutting board but really you could plate this on just about anything. Once you have your pepper sauce line simply put your roasted cauliflower right on top of it. Add your basil yogurt in dollops on top of the cauliflower and garnish with cilantro. Finally finish it all off with a bit of ground oregano. Add your quartered limes wherever you see fit and you are all done. You have once again created another culinary masterpiece with the help of Chef Matt Basile.
