Lastly add allspice, cook till oil comes on top, garnish with chopped greens. Fire fry: Ingredients Undercut julienne ½ kg Yogurt ¾ cup Crushed garlic 1 tbsp Crushed ginger 1 tbsp Onion chopped 1 ½ cup Green red chilies sliced 2 Fresh red chilies sliced 2 Coriander leaves 2 tbsp Cardamom powder ½ tsp Chili powder 1 ½ tsp Allspice 1 tsp Salt 1 tsp Oil ¼ cup Water ½ cup Crushed red pepper ½ tsp Method Cut undercut into thin slices, beat yogurt with all the spices and marinate undercut in this, leave it for 30 mins. In a wok heat oil, add chopped onion, fry till light golden, add chopped ginger garlic, add in marinated undercut, cook on low flame for 5 mins, add water, cover and cook for 10 to 15 mins. Lastly add red and green chilies, coriander leaves, serve with rice. Tandoori chicken toffee: Ingredients for dough Plain flour 2 cups Oil 3 tbsp Salt 1 tsp Water as required Ingredients for chicken filling Chicken 500 gm Oil 1 tbsp Ginger garlic paste 1 tsp Red chili powder ½ tsp Paprika powder ½ tsp Salt ½ tsp Coriander powder ½ tsp Turmeric powder ¼ tsp Pink salt ¼ tsp Whole spices powder ½ tsp Fenugreek leaves ½ tsp Cumin powder ½ tsp Lemon 1 small Thick yogurt 2 tbsp Method for chicken filling In a bowl, add boneless chicken, ginger garlic paste, red chili powder, paprika powder, salt, coriander powder, turmeric powder, pink salt ,whole spices powder, fenugreek leaves, cumin powder, lemon, thick yogurt in it, mix it well and cover it & marinate for 1 hour. In a frying pan, heat oil, add marinated chicken in it. Cook on low to medium flame until chicken tenders and water dries. Method for dough In a bowl, add plain flour, salt, oil in it and mix it well until crumbled. Gradually add water and knead it well to make hard and smooth dough formed. Cover it and rest for 20 mins. After that, divide the dough in two equal parts, dust some flour and roll out the dough with the rolling pin, cut the round shapes with the help of any round cutter or glass, stretch the round dough in oval form, put the cooked chicken in it and wrap like a toffee, deep fry in medium hot oil on low to medium flame, and keep turning to brown evenly.
