The last Jar of Destiny beer of 2023 is Mike's Belgian IPA. Mike went with a combination of three hop varieties in there beer to try and create a balancing blend of earthy/nobel-like hops and some fruitier more modern hops. To that end Mike used Sterling, Cascade and El Dorado hops in this beer. The malt bill was a simple combination of Pilsner, aromatic and carafoam malts. Mike also used a pound of table sugar to boost the ABV without also upping the final gravity. At 7% ABV this beer was still incredibly drinkable and the ABV is almost imperceptible (check one box of getting close to Belgian-esque quality). The Abbaye Ale yeast from Lallemand certainly plays a prominent role on the nose and in the flavor. It delivers plenty of spicy-phenol qualities and it also seems to offer some complementary ester notes with the hops. The overall flavor really became a marriage of the three hops and the yeast together to make a pretty drinkable beer.
