This dish is inspired by the rich tonkotsu broth from Fukuoka, Japan, but made in a simpler way using broth, milk, and a flavorful pork miso base. For this version, I used pork broth from the sisig I made for my husband’s birthday, and it really made a difference in flavor. I’ve tried making this udon with chicken broth and even just water with ground pork before. Those versions still work, but pork broth definitely adds a deeper flavor. My husband loved this bowl and said this has been my 10 out of 10 udon recipe so far, which made me very happy. This recipe is simple, comforting, and perfect for a cozy meal at home.
