I noticed one of my farmer friends here had harvested some cinnamon and was drying it on his patio... so I had to play copy-cat and process my own cinnamon. All you need to do to get cinnamon is to cut down a branch, scrape off the rough outer bark, then peel and dry the inner layer of bark. That's the cinnamon! Along the way to processing, though, I can into a couple of complications. First, there was a wasp nest in the tree. Second, my saw broke! After all that, though, I still processed enough cinnamon to keep us set for a year or more.
