Ramadan Special | No Deep Frying Flaky, layered baked kachori with a spiced chicken filling — inspired by Turkish börek and perfect for iftar. ⸻ 🫓 Dough Ingredients • 2 cups all-purpose flour • ½ tsp salt • ½ tsp instant yeast • ¾ cup lukewarm water Method: In a bowl, mix flour and salt. Add instant yeast and gradually add warm water to form a soft dough. Knead until smooth. Cover and rest for 10 minutes. Divide the dough into 5 equal portions, cover again, and let them relax for 30 minutes. ⸻ 🍗 Chicken Filling • 200 g chicken mince • 1 medium onion, finely chopped • 1 tbsp ginger-garlic paste • 3 tbsp oil • ½ tsp red chilli powder • ½ tsp paprika • ½ tsp Oregano • ½ tsp Chilliflakes • ½ tsp black pepper powder • 2 to 3 green chilli, finely chopped • Salt to taste Method: Heat oil in a pan and sauté onions until soft. Add ginger-garlic paste and cook until the chicken is fully cooked and moisture evaporates. Set aside to cool completely. ⸻ 🧈 Butter Layering • 80 g butter, melted • 3 tbsp oil Mix melted butter and oil together and keep aside. ⸻ 🥐 Shaping & Baking Roll each rested dough ball paper-thin using a little flour. Brush generously with the butter-oil mixture. Cut into long strips (about 3 inches wide), stack them, gently press, and roll into a log. Place a spoonful of chicken filling in the center, seal well, and shape into a kachori. Arrange on a lined baking tray, cover, and rest for 40 minutes.
