Kepiting merupakan salah satu jenis seafood favorit banyak orang. Daging kepiting yang lezat dan nikmat apalagi dipadukan dengan bumbu caramelized butter. Rasanya gurih dengan aroma wangi bawang putih dan bawang merah. Bisa menjadi sajian mewah untuk keluarga di rumah. Resep Caramelized Butter Crab Bahan: 1 ekor kepiting bakau (mud crab) 800-900 gr 2 ruas jahe, iris 2 batang daun bawang Bumbu halus: ¼ siung bawang bombai 5 siung bawang putih Minyak secukupnya Butter sauce: 100 gr mentega 20 siung bawang putih 20 siung bawang merah 4 siung bawang son ½ sdm steak sauce 1 sdm saus tiram ½ sdm oregano 1 sdm parsley, cincang ½ sdm chili flakes 50 ml jus apel / white wine / sake 1 sdm gula ½ - 1 sdt garam ½ sdt merica 1 buah jeruk nipis Langkah: 1. Bunuh kepiting dengan cara dipukul / ditusuk bagian belakang lalu sikat dan bersihkan dengan air mengalir 2. Potong kepiting, buang insangnya dan sisihkan crab mustardnya 3. Siapkan pan, beri air, jahe, dan daun bawang lalu letakkan kepiting di atasnya kemudian kukus selama 7 menit (tergantung ukuran kepiting) 4. Setelah matang, geprek cangkang kepiting dengan ditutupi lap bersih supaya lebih mudah 5. Blender bawang bombai, bawang putih dan minyak hingga halus 6. Panaskan minyak lalu tumis bumbu halus hingga wangi, masukkan bawang son, bawang merah, dan bawang putih lalu masak hingga kecokelatan 7. Masukkan crab mustard dan jus apel masak sebentar lalu masukkan mentega, saus tiram, steak sauce, oregano, chili flakes, dan parsley 8. Bumbui dengan gula, garam, merica aduk rata lalu masukkan kepiting dan masak hingga air susut 9. Pindahkan ke piring saji, beri perasan jeruk nipis dan parsley cincang sebagai garnish 10. The delicious crab meat is tasty, even more so when paired with a caramelized butter sauce. It tastes savory with garlic and shallots aroma. This dish can become a luxurious menu for your family at home. Caramelized Butter Crab Recipe Ingredients: 1 pc mud crab, 800-900 g 5 cm ginger, sliced 2 stalk green onions Spice blend: ¼ pc onion 5 clove garlic Oil, as needed Butter Sauce: 100 g butter 20 clove garlic 20 pc shallots 4 pc spring onion bulbs ½ tbsp steak sauce 1 tbsp oyster sauce ½ tbsp oregano 1 tbsp parsley, chopped ½ tbsp chili flakes 50 ml apple juice / white wine / sake 1 tbsp sugar ½ - 1 tsp salt ½ tsp pepper 1 pc lime Steps: 1. Kill the crab by striking / piercing the posterior area. Brush and clean under running water. 2. Cut the crab. Remove the gills and set aside the crab mustard. 3. Prepare a pan. Pour some water in along with ginger and green onions. Place the crab on top of the aromatics and steam for 7 minutes (depending on the size). 4. After the crab is cooked, cover it with a cloth and pound the shell. 5. Blend the onion, garlic, and oil until smooth. 6. Heat some oil. Sauté the spice blend until fragrant. Add the spring onion bulbs, shallots, and garlic. Cook until they’re browned. 7. Add the crab mustard with apple juice. Cook for a bit, then add the butter in with the oyster sauce, steak sauce, oregano, chili flakes, and parsley. 8. Season with sugar, salt, and pepper. Mix well, then add the crab and cook until the water is reduced. 9. Transfer onto a serving plate. Add some lime juice and chopped parsley as the garnish. 10.
