Mexican Sweet Potato Salaaaaaad (remember makes 2-3 servings with added greens!) 4 sweet potatoes, chopped into bite size chunks (skin still on) steamed bowl of chopped tomatoes 1 red bell pepper 1 can (2-3 cups) of black beans fresh cilantro 1 red onion diced into thin strips 1 can of sweetcorn (1-2 cups) 1 large soft avocado 2-3 limes salt & pepper mix & enjoy :) Walnut, Pea & Basil Pesto (makes 2 ish servings) 1-2 cups of cooked peas (or at least defrosted) 1/2 cup walnuts 2-3 hands of fresh basil 1/4 cup of nooch (nutritional yeast) 2-3 cloves of garlic (or use a sprinkle of ground like I did) juice of 1-2 lemons vegetable broth to thin as needed.
