Prepare the Chickpeas Rinse the soaked chickpeas and cook them in a pressure cooker with water and a pinch of salt until soft (about 3-4 whistles). Drain and set aside. 2. Make the Masala Paste In a small pan, heat oil add onion, tomato, garlic, curry leaves, coriander grated coconut and roast until golden brown, stirring continuously to avoid burning. Once cooled, transfer this mixture to a blender. Add garam masala, red chili powder little water to make a smooth paste. 3. Cook the Chana Ross In a deep pan add oil Mustard seeds, jeera, Ginger garlic paste, curry leaves n hing add chickpeas and pour the masala paste over them. Add enough water to reach your desired consistency (Goan Chana Ross is usually medium-thick). Add salt to taste and bring the mixture to a gentle boil. Simmer for 5-10 minutes, stirring occasionally. 4. Garnish and Serve Garnish with fresh coriander leaves. Serve hot with steamed rice, pav (bread rolls), or chapati.
