One of the most reliable tried and true methods of storing root crops is in a root cellar. Root cellars come in a wide array of shapes, sizes and configurations. We've tried different versions over the 40 plus years of living a self-reliant life. We started with a dug out area located in our barn insulated with hay bales over the top, we've had a root cellar in the crawl space of our Saskatchewan wilderness home and here in Nova Scotia, we have a deluxe root cellar in the basement. But there are those that don't have a good way to store root crops. We wanted to help those in that situation by building our version of a root cellar using a metal trash can. As I mention in the video, this is a starting point for you. Depending on where you live, you may have to modify this. It was only from many years of experience trying to keep water lines and other things from freezing that I was able to guestimate the amount of insulation and construction necessary to successfully keep some root crops in perfect condition through the winter. This is a good example of what can be done utilizing some cheap materials and some time/effort to become just a little more self-reliant. Our experiment kept our root crops fresh for over a quarter of the year through the winter. And you can too!
