This is a must try recipe, the Brilliant Restaurant marinade for tandoori fish. You can use any fish. Heres the recipe for you all: Tandoori Style Fish Serves 2 · 2 boneless sea bass fillets, skin on (or any fish of your choice) · 1 tablespoon Greek yoghurt · 1 teaspoons fenugreek leaves, crushed · ¾ teaspoon red chilli powder · 2 teaspoons ginger and garlic paste · ½ teaspoon green chilli paste · 1 teaspoon white vinegar · 1 ¼ teaspoons salt · ½ teaspoon carom seeds (ajwain) · ¾ teaspoon cumin powder · ½ teaspoon garam masala · 1 ½ tablespoons vegetable oil · ¼ lemon, freshly squeezed · ½ teaspoons turmeric Method: 1. Coat the sea bass fillets with the lemon juice, half of the salt and the turmeric and leave in the refrigerator a day before you want to cook or an hour before marinating 2. Mix together all the other marination ingredients, vegetable oil, yoghurt, fenugreek, chilli powder, ginger and garlic paste, green chilli paste, white vinegar, the remaining salt, carom seeds, cumin powder and garam masala 3. Coat the turmeric and lemon marinated sea bass fillets generously with the yoghurt spiced marinade and leave to marinate for a minimum of one hour in the refrigerator (or overnight for a fuller flavour) 4.
