Bacon is better than biscuits- when it comes to testing out your smoker, season your pit and learn all of your hot/cold spots at the same time by loading it up with some bacon. The biscuit test is a highly replicated process, but this makes way more sense to me! I was smoking 12 pounds of bacon at once on my smoker and figured this would be a cool way to demonstrate how the heat and airflow from the fire box enters the cooking chamber. This is a very simple way to identify the hottest spots on your pit to ensure success when you have the smoker loaded down with meat. I thought I was being super original, but a buddy of mine informed me that @ChudsBbq has done this…I have since seen the video, but I’m not wasting this footage 😂. It seems like a lot of work to use an offset to smoke bacon, but when you're cooking this much, it makes sense- I can fit way more on the smoker at once than anywhere else, I get awesome smoke flavor, and the cleanup is a breeze.
