Stuffed Bell Peppers with Ground Beef and Rice Ingredients: • 1/2 lb (225 g) ground beef • 1 cup (200 g) uncooked rice (you might need less than 1 cup depending on the size of the peppers, but I still cook 1 cup as the leftovers can be stored in the fridge for other meals) • 1 medium onion, finely chopped • 3 bell peppers, tops cut off and seeds removed • 1 cup (240 ml) marinara sauce • 1 cup (120 g) grated cheddar cheese • Olive oil • Salt • Black pepper • Garlic powder • Paprika Instructions: 1. Cook a cup of rice (200 g) according to the package instructions. 2. While the rice is cooking, heat olive oil in a large skillet over medium heat. Add the chopped onion and cook until softened. 3. Add the ground beef, breaking it up with a spatula as it cooks. Season with salt, pepper, garlic powder, and paprika. Cook until the beef is browned and fully cooked through. 4. In a large mixing bowl, combine the cooked rice, beef mixture, 3/4 cup (180 ml) of marinara sauce, and 3/4 cup (90 g) of grated cheddar cheese. Mix well. 5. Preheat your oven to 375°F (190°C). Place the bell peppers in a baking dish. 6. Fill each bell pepper with the beef and rice mixture, pressing down slightly to pack the filling. Top each pepper with a spoonful of marinara sauce and the remaining grated cheese. 7. Put the cut-off bell pepper tops back on. 8. Cover the baking dish with aluminum foil and bake in the preheated oven for 30 minutes. 9. Remove the foil and bake for an additional 10-15 minutes, or until the peppers are tender and the cheese is melted and bubbly. Enjoy! Note!
