Gujiya Malai Rabdi Ingredients: 1 1/2 Ltr Full cream milk 1/2 cup caster sugar/ as per taste 1 tsp cardamom 4-5 strands saffron 1/2 cup khoya/ mava Ingredients for Bread Gujiyaa 10 slices fresh white bread and cut all 4 corners 1/2 cup Khoya/ mava 1 tbsp Almonds chopped 1 tbsp Sultana / kishmish 1 tsp cardamom 2 tbsp apple cut in tiny dice and mix them with 1 pinch of cinnamon powder 2 tbsp grapes 2tbsp almond meal 2 tbsp milk if need to stick bread corner For Garnishing Dry fruits of your choice Fresh fruits of your choice Tutty fruity mix colours Silver Foil(Chandi Verk) Method Put milk in a pan with a heavy base pan and start boiling. Add 1 tsp cardamom in milk. Grind saffron strands with 1 tsp sugar and add when milk is hot enough. Keep stirring milk and scrape all malai from the side and keep stirring till milk left around one ltr or thick consistency. By the time Rabdi is getting ready, let’s start the process of making bread gujiya Take a big bowl and add khoya, apple, grapes, almonds, almond meal and kishmish. Mix them nicely. Take a slice and roll with a rolling pin, as shown in the video. Apply little milk to all comers if needed and put 1 tbsp filling and seal the corners. Keep an eye on Rabdi as well. Occasionally keep stirring the milk. Repeat the process as per step 8 for rest of the gujiya Set gujiya in a flat serving dish of your choice for setting the rabri. By now, milk should be reduced and is time to add sugar and khoya. Let it boil for another 10 minutes. Keep stirring the liquid as it cooks. Now pour this hot thick malaidaar Rabdi over gujiya in the serving dish. Your dish is ready. You can garnish/decorate by applying silver foil and whatever condiments you like for decorations as per your preference. Note- To make the filling for gujiya, you can only use dry or fresh fruits. It is all your preference and taste. If you like you can shallow fry gujiya and then add Rabdi on it. Try this dessert and share your experience in the comments. Cooking is all about creativity.
