看到網友chef Andrea Susto，自香港搬到北京，加入北京Opera BOMBANA 成了新主廚，很有意思，他告訴我非常享受而且適應北京的生活，每天都有驚奇的新發現，也覺得來得正是時候 。 他與chef Bombana 都來自意大利北部，Andrea 的菜品品嘗起來跟香港本店的有具體的連結，他的性格誠懇，廚藝精湛，看得出十分勤奮。 而上任不久的餐廳經理Vincenzo Stratoti，之前我在澳門BOMBANA見過幾次，印象中很專業，可以明顯地感受到Opera BOMBANA整體的脫胎換骨。 原本當初Opera 是想更走更casual的路線 ，看來BOMBANA強項還是fine dining 。（同一集團的CIAK的小館子當然表現也不俗） 這次停留在北京的中午 ，利用時間過去品嘗，整體經典雋永。 看來摘星勢不可擋，值得給他再一次機會。 Both chef Andrea Susto and Chef Bombana are from northern Italy.
