What is called iced lemon tea in Thai is acutally iced lime tea as it is made in Thailand. Find the easy print recipe at https://www.tastythais.com/iced-lime-tea. Limes are a product of Thailand and are plentiful and cheap. Given the imprecise nature of Thai language the Thai name 'cha manao' refers to both lime tea and lemon tea - and 'cha manao yen' refers to the cold iced version. The taste of lime is definitely different to lemon but is still very similar so you can use either lemons or limes for the recipe. The tea needs to be quite strong to compete with the lemon/lime sourness and sugar is added to temper the overall taste. This recipe uses Oolong tea but you can use black tea or green tea if you prefer. Bear in mind that teas vary in strength and so if using a different tea then you will need to adjust the amount used. As for sugar, you will see we use a lot of sugar to make this drink as is the case with most drinks in Thailand. You may prefer less sugar and so adjest to your desired taste. The drink made in this recipe is close to proper cha manao yen as you would be served by the best street vendors or Thai restaurant but do be aware that many will also use packet mixes for simplicity, where the stall is run by a business and staffed by employees who work to a given process. The best tea is served by individual vendors who will make it with proper tea rather than packet mixes.
