The juiciest kebabs flavoured with beautiful fresh lemons. If you are a fan of citrus, this one is for you! Perfect served with warm buttered naan on the side, fire up those grills :D INGREDIENTS ½ cup plain yogurt 2 tbsp chickpea flour 1 tbsp grated ginger 1 tbsp grated garlic 4 thai chilis, finely minced Juice and zest of 2 lemons 3 tbsp ghee 1 tsp garam masala 1 tsp ground turmeric ½ tsp nutmeg ½ tsp ground cardamom Salt to taste 12 skinless chicken drumsticks Chopped coriander and lemon wedges to garnish METHOD To a large bowl add yogurt, chickpea flour, ginger, garlic, chilis, lemon juice and zest, ghee, garam masala, turmeric, nutmeg, cardamom, and salt to taste. Mix well. Make 2-3 slashes on the chicken drumsticks. Add chicken drumsticks to the marinade, and mix well to coat. Cover bowl with plastic wrap and refrigerate for a minimum of 2 hours to overnight for maximum flavour. Heat a grill to 375 degrees fahrenheit. Place marinated chicken on grill, and cook for 8-9 minutes on each side, or until completely cooked through to the middle. Garnish with chopped coriander and lemon wedges before serving. Enjoy!
