Polish Easter Cake - Mazurek Ingredients: For the crust: 2 cups (300g) all-purpose flour 5/8 cup (10 tablespoons) chilled unsalted butter, diced 1/4 cup caster or superfine sugar - is a smaller grain than your typical sugar. Think of caster sugar as the medium between your normal sugar and your powder sugar. 1 large egg 1 egg yolk 1 tablespoon of water For the filling: 4 tablespoons of sour jam or marmalade (such as cherry, plum, or black currant) 1 can (14 oz) of sweetened condensed milk For decoration: 1/2 bar of chocolate or Decorating Gel in Brown 1 small Decorating Gel in White 1/4 cup sliced almonds 1 tablespoon cranberries Easter M&Ms or your favorite Easter candy resembling eggs Sprinkles Green sprinkles for garnish Step 1: Cooking the Condensed Milk Begin by cooking your condensed milk in a pot on medium heat until it starts to boil. Once boiling, reduce the heat to low and simmer for approximately 2.5 hours until caramelized. Ensure the can is fully submerged in water throughout this process. Step 2: Preparing the Crust Preheat your oven to 355°F (180°C). In a food processor, combine flour, diced butter, and sugar. Pulse until crumbly. Add the egg, egg yolk, and water, then mix until a dough forms. Transfer the dough onto a floured surface, knead briefly, and divide into two portions. Wrap both portions in plastic wrap and chill in the refrigerator for 25-30 minutes or in the freezer for 10-15 minutes. Step 3: Rolling Out the Dough Remove the dough from the refrigerator, knead briefly, and roll out to fit your baking pan. Carefully transfer the rolled dough to the pan, trimming to fit if necessary. Roll the reserved portion of dough into coils and place them around the edges of the crust, gently pressing with a spoon to leave decorative marks. Step 4: Adding the Filling Before spreading the jam or marmalade, prick the bottom of the dough with a fork to prevent puffing. Spread jam or marmalade evenly over the crust. Bake in the preheated oven for 20-30 minutes until golden brown. Allow to cool. Step 5: Decorating Carefully remove the caramelized condensed milk from the pot and pour over the jam layer, spreading evenly. Cut Easter candy in half and decorate the cake. Warm the chocolate and use it or Decorating Gel in Brown to draw decorations on the cake, such as Alleluia signs and Pussy willow branches. Use Decorating Gel in White for additional details. Sprinkle with green sprinkles and garnish with sliced almonds and cranberries. Step 6: Enjoy! Allow the cake to cool completely before slicing and serving.
