Unexpectedly, the signature East China Sea Large Yellow Croaker turned out to be the biggest letdown! I had high expectations for this signature fresh fish, but was greatly disappointed when it was served. The fish meat was loose with no elasticity at all, the umami taste was extremely faint and mixed with an earthy odor. The classic steamed cooking method not only failed to highlight the fish's sweetness and freshness, but also couldn't mask the off-flavor, and even the characteristic garlic-clove texture of the large yellow croaker was completely gone. On the contrary, other Shanghainese dishes in the restaurant were of quite high standard: the braised pork belly in rich sauce was fatty but not greasy and melted in the mouth, the scallion oil noodles were coated with sauce evenly and full of fragrance, and the sizzling eel paste was tender, smooth and delicious, fully showing the classic essence of Shanghainese cuisine. The reputation of a 10-year-old restaurant is hard-won, and a subpar signature dish is really a pity.
