尋味武漢遇見這家開業十年的上海人家家常菜,憑著地道本幫味積攢了不少老客,誰料鎮店之寶的東海大黃魚竟成了最大敗筆!本對這道招牌鮮魚滿懷期待,上桌後卻大失所望,魚肉鬆散毫無彈性,鮮味淡之又淡還夾雜著土腥味,經典清蒸做法不僅沒凸顯魚的鮮甜,反倒沒壓住異味,連大黃魚該有的蒜瓣肉質感都蕩然無存。反觀店內其他本幫菜卻頗有水準,濃油赤醬的外婆紅燒肉肥而不膩、入口即化,蔥油拌麵根根掛汁、香氣濃郁,響油鱔糊嫩滑鮮美,盡顯本幫菜的經典精髓。十年老店的口碑來之不易,一道失準的鎮店之寶實在可惜,也盼店家能抓緊品控,不負武漢老饕的期待。 Exploring the flavors of Wuhan, I came across this 10-year-old Shanghai home-cooked restaurant that has gained many regular customers with its authentic Shanghainese flavors. Unexpectedly, the signature East China Sea Large Yellow Croaker turned out to be the biggest letdown! I had high expectations for this signature fresh fish, but was greatly disappointed when it was served. The fish meat was loose with no elasticity at all, the umami taste was extremely faint and mixed with an earthy odor. The classic steamed cooking method not only failed to highlight the fish's sweetness and freshness, but also couldn't mask the off-flavor, and even the characteristic garlic-clove texture of the large yellow croaker was completely gone. On the contrary, other Shanghainese dishes in the restaurant were of quite high standard: the braised pork belly in rich sauce was fatty but not greasy and melted in the mouth, the scallion oil noodles were coated with sauce evenly and full of fragrance, and the sizzling eel paste was tender, smooth and delicious, fully showing the classic essence of Shanghainese cuisine. The reputation of a 10-year-old restaurant is hard-won, and a subpar signature dish is really a pity.
