I started keto last year. Therefore, I didn’t get to eat any mooncake at all during last year’s Mid-Autumn festival. Although I can eat a bit of normal mooncake this year, I thought it will be good to make my own keto / low carb jelly mooncake and share this recipe with my fellow keto friends! This recipe is pretty easy and straightforward. Basically, add the dry ingredients to the liquid, dissolve them over low heat, pour them into a mould and chill in fridge to set. If the liquid happens to solidify before pouring into the mould, freak not! Simply heat it on low fire and stir till it turns into liquid again. The sweetness of the mooncake is up to you. The amount I added has very mild sweetness which is ideal for little children and the elderly. Here, I wish everyone a Happy Mid-Autumn Festival 中秋节快乐!
