Ingredients & Recipe Crock Pot Red Beans with Smoked Ham Hock & Sausage Ingredients • 1 bag dry kidney beans • 1 smoked ham hock • 1–2 cups chopped smoked sausage • 1 yellow onion, diced • 1 bell pepper, diced • 1 sleeve celery, chopped • 1 tablespoon minced garlic • Onion powder, to taste • Garlic powder, to taste • Black pepper, to taste • Tony’s seasoning, to taste • 32 oz chicken broth • Water (as needed) ⸻ Instructions (6-Hour Slow Cook) 1. Prep the beans Rinse the dry kidney beans. (Soaking overnight is recommended.) 2. Add to crock pot Add the beans to the crock pot. Place the smoked ham hock on top. 3. Add liquids Pour in the chicken broth. Add enough water to cover the beans by about 1–2 inches. 4. Add vegetables & seasoning Add onion, bell pepper, celery, and minced garlic. Season with onion powder, garlic powder, black pepper, and Tony’s seasoning. 5. Cook Cover and cook on HIGH for 6 hours, stirring once or twice if possible. 6. Add sausage During the last 1 hour, stir in the chopped smoked sausage. 7. Shred ham hock Remove the ham hock, shred the meat, discard the bone, and return meat to the crock pot. 8. Thicken & finish Mash some beans against the side of the crock pot to thicken. Taste and adjust seasoning. 9. Serve Serve hot, traditionally over rice.
