LINK: https://amzn.to/2JgZpr8 ITALIAN LINK: https://amzn.to/2BR0RN3 --------------------------- INGREDIENTS: Makes 18 triangle snacks: 600 g (1,3 pound) peeled and cubed potatoes 25 g (1/4 cup) Parmigiano Reggiano or Parmesan cheese, grated 60 g (6 tbsp) shredded Mozzarella cheese, or Cheddar cheese 1/2 tsp salt black pepper 1 tbsp fresh chopped parsley Breading: 80 g (2/3 cup) all purpose flour 120 g (1/2 cup) water salt 100 g (2 cups) Panko bread crumbs 1 tbsp paprika DIRECTIONS: 1. Steam or boil potatoes until fork tender. 2. Mash potatoes and add: Parmigiano cheese, Mozzarella cheese, salt, pepper, parsley. 3. Evenly spread the mix into a 20cm-8inch square cake pan lined with parchment paper. 4. Put in freezer for 1 hour (you can store in freezer for up to 3 months). 5. Meanwhile prepare the breading: in a medium size bowl mix flour, water and salt until well combined. 6. In another bowl, mix Panko and paprika. 7. Remove the potato sheet from the freezer and cut into 9 equal squares. If you leave in freezer for more than 1 hour, slightly warm at room temperature for few minutes to cut it easily. 8. Cut every square into 2 triangles. 9. Dip every triangle into flour mix, then roll into Panko mix. 10. Place the triangle in freezer while you're heating the frying oil. You can store in freezer for up to 3 months. 11. Heat Peanut oil until a wooden spoon's handle bubbles if deep into il (about 175-180°C-350°F). 12. Deep fry potato triangles for few minutes until golden brown. 13. Drain on frying paper or paper towel just for few minutes. 14. Season with salt and pepper and serve immediately.
