👇 HOW TO MAKE THE ULTIMATE BAKED BERRY CHEESECAKE 👇 INGREDIENTS: PASTRY 250ml/140g Cake flour 2ml Baking powder 45ml Castor sugar 80g Butter or margarine 5ml Grated lemon rind 2ml Vanilla essence 1 Extra large egg yolk FILLING 4 x 250g smooth cottage cheese 250ml sour cream 160ml/140g castor sugar 60ml/35g cake flour 3 extra large eggs 5ml vanilla essence 5ml grated lemon rind TOPPING 30ml brown Sugar 400g mixed berries 60ml corn starch METHOD FOR PASTRY: Sift flour and sugar into a bowl. Rub in butter with fingertips till crumbly. Add the lemon rind, essence and egg yolk. Knead lightly on floured surface. Refrigerate for at least 30 minutes. Press pastry onto base of a greased round pan. Bake in a preheated oven at 200°C for approximately 8 minutes. Remove from oven and cool. Reduce oven temperature to 160°C. FOR FILLING: Beat together the cottage cheese, sour cream, sugar and flour until smooth. Add eggs (one at a time), vanilla essence and lemon rind then mix well. Pour the filling into pastry base and bake for 1 – 1 ¼ hours, or until set. DO NOT REMOVE CHEESECAKE YET…. Switch oven off and open the oven door. Only remove once cake and oven has completely cooled down. FOR TOPPING: Place berries in a saucepan with sugar. Set over a medium heat and stir until berries have become saucy. Sift in corn starch to thicken the sauce and remove from heat. Let the sauce cool before pouring it over the cheesecake. DON'T FORGET TO SUBSCRIBE!
