Today we’re taking our foraged kei apples (Dovyalis afra) and turning them into a sweet, tart jam. If you’ve ever made jam from kei apples before, please give me your tips! In general, I tend not to like following recipes, but this is roughly what I did. Recipe: Kei apples! I had about 2.5 lbs. 2.5 cups sugar (just use a cup of sugar for each pound of kei apples you have) Juice of one underripe lemon (for the pectin) Combine your kei apples and sugar. You can halve the kei apple fruit first, but it’s probably not necessary. I also let mine macerate on the counter for 3 hours, and that’s also probably not necessary. Boil the kei apples and sugar for 20 minutes. No need to add extra water. In order to activate the pectin that’s naturally present in the kei apples (which will help the jam set), you need to add acid. I used the juice from an underripe lemon. A ripe lemon would work. You could also just add store-bought pectin instead. I stopped boiling mine after 30 minutes. You can see the results in the video. Next time I’d boil longer and bring the mixture to 220 degrees Fahrenheit so the sugar can bond with the pectin. But it kind of doesn’t matter. It’s all still jam in the end. Also I could have added another cup of sugar. Taste as you go! If you want it sweeter, add more sugar. Next time I would mix the kei apples with a less tart fruit like strawberries, peaches, or cherries. This jam will keep a month in the fridge, easy. It’s NOT shelf stable.
