A cozy baking day at home… I made two kinds of homemade cupcakes; Apple Cinnamon and Carrot Walnut Soft, fragrant, and full of warm seasonal flavors. I baked them with love and packed them as a sweet gift to share with friends. ✨ Apple Cinnamon Cupcakes Ingredients (makes about 12 cupcakes): 1 ½ cups (190 g) all-purpose flour 1 tsp baking powder ½ tsp baking soda 1 tsp cinnamon ¼ tsp nutmeg (optional) ¼ tsp salt ½ cup (115 g) unsalted butter, melted or soft ½ cup (100 g) brown sugar ¼ cup (50 g) white sugar 2 large eggs 1 tsp vanilla extract ½ cup (120 ml) milk or yogurt 1 large apple, peeled and finely chopped or grated Instructions: 1. Preheat oven to 175 °C and line a muffin tin. 2. In a bowl, mix dry ingredients: flour, baking powder, baking soda, spices, salt. 3. In another bowl, beat butter and sugars until smooth. Add eggs and vanilla. 4. Add milk (or yogurt). 5. Fold in the dry ingredients, then mix in the apple pieces. 6. Fill cupcake liners ¾ full and bake for 18–20 minutes or until golden and a toothpick comes out clean. ✨ Carrot Walnut Cupcakes Ingredients (makes about 12 cupcakes): 1 cup (130 g) all-purpose flour ½ tsp baking powder ½ tsp baking soda 1 tsp cinnamon ¼ tsp nutmeg ¼ tsp salt 2 large eggs ½ cup (100 g) brown sugar ¼ cup (50 g) white sugar ½ cup (120 ml) oil (sunflower or neutral oil) 1 tsp vanilla extract 1 ½ cups (150 g) finely grated carrot ½ cup (50 g) chopped walnuts Instructions: 1. Preheat oven to 175 °C. 2. Mix flour, baking powder, baking soda, cinnamon, nutmeg, and salt. 3. In another bowl, whisk eggs, sugars, oil, and vanilla. 4. Add carrots and walnuts, then fold in the dry mix. 5.
