Recommended Temperatures Whole Turkey, in the breast - 165°F Whole Turkey Convection Roast 350°F (Auto Convert: ON or Bake 350°F Beef Tenderloin Medium Rare - 130-135°F Beef Tenderloin Convection Roast 425°F (auto convert: ON) or Bake 425°F Ham - 145°F Ham Convection Roast 325°F (Auto Convert: ON) or Bake 325°F Beef Rare - 120°F - 130°F Beef Medium Rare - 130°F - 135°F Beef Medium - 135°F - 145°F Medium Well - 145°F - 150°F Well Done - 160°F and Above How to Convection Roast Prime Rib INGREDIENTS: 1 4 – 5 Lbs. Boneless Beef Ribeye Herb Butter 6 oz Unsalted Butter 2 sprigs Rosemary, chopped 6 Cloves of Garlic, minced 2 Sprigs Parsley, chopped Spice Mixture 4 Pinches of Kosher Salt 1 Tbsp Smoked Paprika 1 Tbsp Onion Powder 1 tsp Garlic Powder 1.5 Tbsp Black Pepper, fresh cracked 1 Tbsp Porcini Mushroom Powder (optional) DIRECTIONS: 1. Pat the Ribeye dry and season liberally with the spice rub. 2. Chop Herbs, garlic and combine with tempered butter. 3. Using a Roasting rack and tray, place the Prime Rib in the center of the rack and rub the outside of the prime rib with herb butter. 4. Make sure your oven rack is on the second position and place your Prime Rib roast in the oven. 5. Select Convection Roast – 275F. 6. Insert Probe into the center of the meat. 7. Set your oven timer for 2 hours. 8. Increase your oven temperature to 325F and reset your timer for 30 minutes. 9. Your Prime Rib is finished cooking when it has achieved 120F and is allowed to rest and cool for at least 10 minutes. The final temperature after resting will be Medium Rare 135F.
