Lahmacun is one of the most popular street foods in Turkey. Outside of Turkey, it’s often called "Turkish Pizza", but it’s not actually pizza. It’s much thinner, crispier, lighter, and packed with a delicious spiced meat topping. Traditionally, lahmacun is baked in large stone ovens, giving it that iconic crispy texture. But in this video, we’ll show you how to make authentic lahmacun at home, using what you already have — no stone oven needed! Turkish Lahmacun Recipe: Ingredients For the Dough: 3 cups all-purpose flour 1 teaspoon salt 1¼ cups lukewarm water (may need slightly more or less) For the Topping: 2 large onions, finely chopped ½ bunch parsley, finely chopped 1 large tomato, grated or finely chopped 2 tablespoons tomato paste 1 teaspoon salt 1 teaspoon black pepper 1 teaspoon paprika (or red pepper flakes) ¼ teaspoon ground cumin 2 tablespoons water 1 tablespoon vinegar 400g ground beef (80% lean) To Serve: Fresh parsley Thinly sliced onions mixed with sumac Lemon wedges Instructions Make the Dough: In a large bowl, whisk together the flour and salt. Gradually pour in the lukewarm water while mixing with a fork. When it starts to come together, continue mixing with your hand. Wet your hand occasionally to help with kneading. Lightly flour your work surface and transfer the dough onto it. Knead the dough until smooth and elastic (about 8–10 minutes). Cover with a kitchen towel and let it rest while you make the topping mixture. Make the Topping: In a large bowl, combine the chopped onions, parsley, tomato, and tomato paste. Add the spices: salt, black pepper, paprika (or red pepper flakes), and cumin. Stir in the water, vinegar, and ground beef. Mix everything well until evenly combined. Set aside. Roll Out the Dough: Lightly flour your counter. Transfer the dough onto it. Shape it into a log about 14 inches (35 cm) long and cut it into 10–11 equal pieces. Roll each piece into a ball and place them on a lightly floured surface. Cover them with a kitchen towel so that they won’t dry. Roll each dough ball into a thin circle (about 8–10 inches in diameter). You can either roll out all the dough balls first, placing them in a single layer on a floured surface and covering them with kitchen towels, or roll them out one by one as you bake; roll one, bake it, then move on to the next. Cooking Options Oven Method: Preheat the oven to 450°F (230°C). Line a baking sheet with parchment paper. Place one or two rolled dough rounds on the sheet. Spread about 2 tablespoons of the topping evenly over each, all the way to the edges. Press gently with the back of a spoon to help the topping stick. Bake for 7–8 minutes or until the edges are slightly crispy. Repeat with the remaining dough balls. You can reuse the same parchment paper 2–3 times, but after that, it’s best to replace it with a fresh sheet. Stovetop Method: Heat a non-stick pan with a lid over medium-low heat. Place one rolled-out dough round in the pan. Spread the topping evenly and press it gently with the back of a spoon. Cover with the lid and cook for 7–8 minutes, or until you see light browning on the bottom. Try not to let condensation from the lid drip onto the lahmacun or into the pan. If water drops into the pan, gently wipe it off with a paper towel. If the pan gets too hot after a few batches, take it off the heat and let it cool down slightly before adding the next dough. Then continue as shown in the video. To Serve: Top your lahmacun with parsley and sumac onions, squeeze lemon juice over, and roll it up. Enjoy!
