Doong, also known as Chinese tamales, are traditionally eaten in Chinese culture during the Dragon Boat Festival which falls on the 5th day of the 5th month of the Chinese Lunar Calendar. Other names for Doong include Joong (based on Cantonese), Bakchang (based on Hokkien) and Zongzi (based on Mandarin). Shapes can range from conical to pyramidal, and fillings range from rice colored brown with soy sauce to dried fruits. My maternal grandmother taught me how to make Hoisan-style Doong, which can be distinguished based on their tetrahedral shape and savory fillings such as pork, cured meat, salted duck eggs, peanuts, and dried seafood which are simply flavored with salt. In Part 1 I review the preparation of all the ingredients. Part 2 goes over the wrapping and cooking process. Note: Some of the English subtitles may be worded awkwardly because I tried to make it so the grammar matched word for word with the spoken Chinese as best I could. This way people can try to learn by figuring out which words in the subtitles correspond to the ones I am saying.
