Prepare the Raw Alamang Rinse the raw bagoong alamang in water to reduce saltiness. Drain well. 🔹 2. Basic Guisado Bagoong: Heat oil in a pan. Sauté garlic and onion until fragrant. Add the rinsed alamang and cook while stirring. Add vinegar (do not stir right away); let it boil to reduce smell. Add sugar and pepper. Simmer on low heat for 20–30 minutes, stirring occasionally. Let cool before storing. 🔹 3. Sweet & Spicy Bagoong: Follow the same process as the guisado, but add extra sugar (around 3–5 tbsp total). Add chili flakes or chopped fresh sili after the vinegar simmers. Simmer until oil rises on top and texture becomes thick and glossy. 🔹 4. Bagoong with Pork: Fry cubed pork belly until golden and crispy. Set aside. Make the guisado version of the bagoong. Once it’s almost done, stir in the fried pork bits and simmer for a few minutes.
