In this video I adapt the classic Nova Scotia Hodge Podge for cooking in the woods Nova Scotia Hodge Podge (Old Brother Hubbard) Ingredients: green and yellow beans peas (shelled) new carrots new potatoes (scrubbed and quartered) onion bacon butter 1 cup heavy cream Salt and pepper to taste Chicken broth optional Directions: 1. Trim the ends of the beans, scrub and remove carrot tops; leave whole if small or cut in half 2. Cook and cut up bacon 3. Sauté bacon with onions in pot until soft 4. Add potatoes and carrots 5. Cover with an inch of broth or water 6. Bring to boil until tender 7. Add beans and peas 8. Simmer until tender 9. Add salt and pepper to taste 10. Add heavy/whipping cream 11. Simmer a few more minutes 12. Serve with bread or roll Mother-in-Law’s Hodge Podge Ingredients: 1 ½ cup green beans 8 new carrots 6 new potatoes (medium) 1 cup shelled peas 1 small cauliflower 1 cup diced salt pork ¼ cup flour 3 Tbs chopped chives Salt & pepper to taste Directions: Simmer the carrots and potatoes for about 5 minutes. Add the beans and simmer for an additional 5 minutes. Add the peas and cauliflower and simmer for a final 5 minutes (15 minutes total) Strain water and reserve water Separately, render the salt pork over medium heat. When golden brown, discard all but ½ cup of fat. Add flour and stir until smooth and light brown. Add cream and approximately 1 cup of the vegetable water. Stir until thick. Add additional vegetable water if required Pour sauce over vegetables and serve
