Here is a basic recipe for a traditional ciambella: Ingredients: 300g all-purpose flour 200g sugar 4 eggs 1/2 cup vegetable oil (120 ml) 3/4 cup milk (180 ml) 2&1/2 teaspoon of baking powder 1 tablespoon Lemon Zest A pinch of salt Optional: 1 tablespoon Cocoa powder 1 tablespoon Milk Directions: Preheat the oven to 180°C (350°F) and grease a ring-shaped cake pan (ciambella pan) or a bundt pan. In a large bowl, whisk together the sugar, eggs and lemon zest until the mixture is light and fluffy. Add ther oil and milk, and mix until combined Sift the flour, baking powder, and salt together, and gradually add them to the wet ingredients. Mix until fully incorporated. Here I have mixed 3 tablespoons of batter and 1 tablespoon cocoa powder and 1 tablespoon milk. Pour the batter into the prepared pan, smoothing the top with a spatula. Bake for 40-50 minutes, or until a toothpick inserted in the center comes out clean. Cool the cake in the pan for a few minutes, then remove it from the pan and allow it to cool completely on a wire rack. If desired, dust with powdered sugar before serving.
