A small town boy from Asansol, belonging to a middle-class family, he faced the loss of his mother at the age of 18. But with the mantra, ‘believe in yourself’ and a positive attitude he achieved success in life. A learning disability or even failing in school never stopped him to give up on the ‘believe in yourself’ mantra. Sabyasachi Gorai is today known as Chef Saby and runs his restaurant Lavaash by Saby. His journey into the world of food entrepreneurship wasn’t without struggles. He started as a backbencher students pursuing the Hotel Management course. Training, hard work, dreaming big and self-motivation have led Chef Saby to be recognized as one of the greatest food connoisseurs in the food and beverage industry. There were times in his life when he felt lost and looked for some inspiration. But through life experiences, Chef Saby learned that looking within, and the right amount of confidence, motivation, hard work, determination were the true source of inspiration. Sharing one of the most inspiring moments of his life, Chef Saby says he began with Rs 500 and a broken bicycle, but with a zeal for hard work, a dream big attitude and lots of confidence, he found his true potential. 42-year-old Chef Saby, who has a cult following in the culinary world, wanted to dream big & started his career in hotel management and did some odd jobs before being enchanted by the kitchen and food, where he saw his creativity take shape. Coming from a middle-class Bengali family, Chef Saby, an art graduate, started to use food as a medium of creative expression. Chef Saby shares his experience of one of the struggles he faced during his Hotel Management days. Belonging to a lower middle class, he had no option, but to borrow clothes and shoes from his friend. But that never let down his confidence. With passion and belief in himself, he cracked the interview and got his first job in Juhu, Bombay. He knew that he had the potential to excel in life in the food industry. He had an understanding of the creative aspects of food. The passion for becoming a success story in the food industry and being recognized by other food connoisseurs came gradually for Sabyasachi Gorai. A series of events, achievements opened doors within the food industry. Chef Saby’s life is a living example of what it takes to be a success story. The multiple chain Lavaash by Saby is proof of his hard work and commitment. He has won many awards for his food and restaurants. One of his biggest accolades was when he was honoured by the President of India as well as the Varli Awards as the ‘Best Chef of India’. An Award-winning Chef, he also mentors the youth. From Armenian food to Bengali food Chef Saby loves experimenting with the palate.
